21 Day Challenge: One Meal a Day

It’s a day 5 of the 21 Day Challenge and I had a fantastic day! I decided to go back to a different version of intermittent fasting that I used to do months ago. Basically what I do is eat only one meal a day. Today, I didn’t eat lunch until 2pm. I had a salad and a bowl of chili at my favorite vegan restaurant here in Las Vegas. It’s called Violette’s Vegan. If you saw my SnapChat today, you saw a glimpse of what I ate and what the vibe is in the restaurant.

I decided to go back to only eating one meal a day because, ironically, I find it easier to stick to a healthier eating plan when I do. Today, it was actually easy because I didn’t even get hungry before 2pm. The only reason I decided to eat at that time is because it was the only time I had to go to a restaurant alone and enjoy my meal… LOL Since I am a single mother, finding time to eat in peace and quiet is rare, so I took advantage of my “kid-free” time and figured why not go and eat while I had the time. Plus, I wanted to treat myself since it was Friday and I hadn’t eaten out in quite awhile.

I stopped my eating at around 5pm, although I did drink some cranberry juice after 5pm, so I considered my eating window as “still open” at the time. The way I do it, is that I don’t consume anything, food or beverage, that has calories outside of my eating window. So I can drink water, unsweetened tea, but no caloric drinks or food. Tomorrow I will do the same thing. I will try and push my eating time a bit later. Probably closer to 4pm. And again, I’ll stop eating around 6pm.

So that was day 5. I know I wasn’t all raw today but I still consider it a win that I only ate one meal today. So I’ll focus on celebrating my win… yay!!
